This is a genius tip I learned while making caramels recently and I am so excited to share!
If you have ever tried to make caramels you know it is very hard to figure out when they are cooked long enough so that they will be just hard enough when cooled. Here is the trick!
When you are almost finished, or think you are at least, fill up a bowl with cold water, take a small spoon full of the hot caramel and drop it in the water. If it separates at all when you try to take it out, it's not done. If you are able to take it out in a pliable ball, it's ready!
No more runny caramels!
